CHEDDAR & CHIVE SAUSAGE BALLS

Cheddar & Chive Sausage Balls

  • 16 ounces Pork breakfast sausage (mild or spicy)

  • 1.5 Cups Shredded cheddar cheese

  • 1.5 Cups Bisquik or plain-flavored pancake mix

  • 1/2 Cup Cold water

  • 1 Tablespoon Dried chives

  • 1/2 teaspoon Black pepper

  1. In a medium skillet, cook the breakfast sausage until brown. Drain any residual grease, and let the sausage cool to room temperature.

  2. Preheat oven to 325 degrees Fahrenheit.

  3. In a large mixing bowl, stir together cooked sausage, cheddar cheese, and Bisquik by hand.

  4. Add in chives, black pepper. Add half of the cold water, and stir until a dough forms. Add the remaining water as needed. The mixture should be slightly sticky, but not wet or runny. If the mixture hasn’t come together (is still dry and crumbly) after the full 1/2 cup of water, add in additional cold water 1 tablespoon at a time until the dough is sticky.

  5. Using a cookie scoop (or two spoons), scoop 1-inch balls of dough onto a greased baking sheet. The sausage balls will spread when cooking, so leave at least 1 inch of space between scoops.

  6. Bake the sausage balls at 325 degrees for 20 minutes or until the bottom edges of the sausage balls are slightly browned. These sausage balls freeze well and can be refrigerated and reheated well. Enjoy!
